Put the ricotta cheese into a mixing bowl and stir it well.
With clean hands, form the ricotta cheese into balls, about 1 cup each (the size of a tennis ball.)
Wrap the ball(s) of ricotta cheese in a towel or mesh bag and squeeze gently. This helps remove extra whey and improves freezing.
Separately wrap each ball of cheese in cling wrap.
Place the ball(s) of cheese in an airtight container or a freezer bag. If you need to press down a little on the cheese to make it fit in the container, go for it.
Write today's date on a label and stick it to the container or the freezer bag. Put it in the freezer.
